About the Role:
Okell's Inns is looking for an experienced and hands-on Head of Food to lead the food operations across our 11-15 food sites on the Isle of Man. This is a strategic and operational leadership role, where you will take full ownership of our food strategy, kitchen operations, and chef teams, ensuring quality, consistency, and profitability across the estate.
We're seeking a proven Head of Food from a multisite pub chain background, with hands-on kitchen and food experience, as well as expertise in menu development, supplier management, and cost control. A background as a Chef or Area Manager is highly desirable, and familiarity with Zonal Aztec, Acquire, and Menu Master software is essential.

Key Responsibilities:
Food Marketing & Sales Growth.
Develop and implement marketing strategies to promote the food offering.
Work closely with the marketing team to create engaging campaigns and promotions.
Identify and execute opportunities to increase food sales through seasonal menus, promotions, and events.
Chef Recruitment & Performance Management.
Lead chef recruitment to attract and retain top talent.
Implement performance management and training to develop high-performing kitchen teams.
Ensure all kitchens operate to a consistently high standard.
Menu Development & Innovation.
Develop scalable, high-quality menus that balance creativity and commercial viability.
Work with chefs to refine existing dishes and introduce new food concepts aligned with market trends.
Ensure consistency and quality across multiple sites.
Operational Management & Software Expertise.
Oversee kitchen operations, ensuring efficiency, cost-effectiveness, and compliance.
Manage kitchen equipment procurement and maintenance.
Utilise Zonal Aztec, Acquire, and Menu Master software to optimise food management, stock control, and reporting.
Supplier Management & Procurement.
Manage supplier relationships and negotiate contracts for quality ingredients at competitive prices.
Improve ordering, stock control, and waste reduction processes.
Financial & Cost Control.
Manage food costs across multiple sites and ensure gross margin targets are met.
Implement budgeting, forecasting, and pricing strategies to maximise profitability.
Monitor key financial metrics and report on performance.
Health & Safety Compliance.
Ensure all kitchens meet food safety regulations, health and safety laws, and industry best practices.
Conduct regular audits to uphold high hygiene and operational standards.
What We're Looking For:
Experience as a Head of Food in a multisite pub chain is a must.
Hands-on kitchen and food experience background as a Chef or Area Manager preferred.
Strong leadership skills to motivate and develop large, diverse teams.
Expertise in menu development, food trends, and kitchen operations.
Proven track record in increasing food sales and driving profitability.
Knowledge of Zonal Aztec, Acquire, and Menu Master software is essential.
Financial acumen with experience managing gross margins, food costs, and budgets.
Excellent understanding of food safety regulations and compliance.
Strong organisational and problem-solving skills with a hands-on approach.
